This intensive program of one-to-one, private instruction
and
student teaching is available year-round.
Reservations are available up to one year in advance with paid tuition.

This program features 30 hours of instructional methodology and consultation for earning the distinction of becoming a Certified Instructor of Ice Carving (CIIC). This level of training will prepare the carver to become a skilled ice carving instructor who is qualified to enhance the curriculum and, most important, ensure the safety of students when handling (moving, lifting, lowering) 300 lb. blocks of ice, using chainsaws, die grinders, drills, chisels, torches, freeze spray and other inherently dangerous activities associated with ice carving. 10 of the 30 hours consist of offsite coursework designed to make the student's preparation for the next day's instructional activities as beneficial and enjoyable as possible. Textbooks, drawing aids, clay, modeling tools, and other materials are furnished upon arrival at AICD for this offsite coursework.
Special note: Under the guidance of Master Teacher Paul Germain, this program includes an opportunity for chefs to provide actual instruction to a beginning ice carving students at the AICD studio - with a major emphasis in standards-based curriculum development and safe carving, lifting, transporting, set-up, and take-down methods.
The ability to recieve immediate feedback from both the AICD instructor and the beginning student carver makes this teaching opportunity particularly meaningful and beneficial for developing teaching skills and safe instructional practices. The beginning carver will be selected specifically to provide the student instructor with an ideal one-to-one teaching opportunity. |

Since taking your class, I used that information to start and work into our curriculum an ice-carving class for students of the culinary arts program that we have here at Orange Coast College. The class I instructed was a 5 week course that was built upon creating ice sculptures that would be used at our scholarship pre-awards dining event. Each year the event is themed and this past year it was done around literature (Alice in Wonderland). Attached are some photos. There are two ice tables with characters from the novel. We had to use your wonderful ice luge, and had 5 of them in a row with the chefs pouring the beverages behind them. There also were ice bowls made that were used for punch bowls as well as flower arrangements. The initial class was a pilot class and is now working its way thru curriculum. Thank you, Paul!"

Note:
The art of ice carving involves the use of tools and equipment that are inherently dangerous. To meet the safety-related needs of professional ice sculpture companies, ice carving schools, hotels, country clubs, and caterers, a high priority is given to the development of safe carving, delivery, and set-up practices. This program requires that the carver be in excellent health, and must be physically able to work with heavy materials and equipment for prolonged periods of time in both warm and cold environments.
